Polish Funnel Cake - Chruscik Lany - Recipe #105


Ingredients:
3/4 cup of flour
1 tbs of icing sugar
2 eggs
1/2 cup of milk
1 tsp of Vanilla extract
1/2 tsp of baking powder
1 cup of oil for frying
Icing sugar for dusting

Separate the eggs. Beat the egg whites until stiff peaks and set aside.

Mix the egg yolks with sugar, milk and vanilla until all is well combined then spoon by spoon add the flour, constantly mixing. We need batter thicker than pancake batter.  Fold in the egg whites.
Fry in a deep frying pan in about inch deep, hot oil. Pour the batter through the funnel or use a ziplock bag with cut off corner. Create birds nest like pattern.

Flip to other side when golden brown. After removing from the pan leave for couple of minutes on a paper towel to get rid of any excess oil. Serve warm, dusted with icing sugar.
